I friarielli sono un tipo di verdura dal sapore leggermente amaro, per essere precisi si tratta dalle inflorescenze delle cime di rapa, non di solo fogliame amarognolo ma raccolto con i suoi fiorellini a testoline.
Per i sali minerali, le verdure sono il meglio che pu˜ offrire la natura, in particolare si segnala il contenuto di calcio e di potassio, responsabile del corretto funzionamento del cuore. ferro, fosforo, magnesio, zinco e iodio, abbondano nei friarielli.
