Il Bramito del Cervo è un vino Chardonnay che nasce da uve omonime. Dopo la vendemmia i grappoli, raccolti durante la notte, vengono raffreddati e convogliati all'interno di particolari serbatoi in grado di mantenere la temperatura a 10° C senza alterare le caratteristiche varietali dell'uva. Dopo alcune ore di contatto con le bucce, il "mosto fiore" viene trasferito in barrique di rovere francese (Alliers e Troncais) dove si svolge la fermentazione alcolica e parzialmente quella malolattica. Per una parte del vino è seguito un periodo di affinamento in legno di circa 5 mesi mentre l’altra parte, svolge la fermentazione alcolica direttamente in serbatoi di acciaio inox dove rimane a contatto con le fecce fino al momento dell’assemblaggio e del successivo imbottigliamento.
Caratteristiche organolettiche
Il Bramito del Cervo Castello della Sala di Antinori è un vino dal colore giallo brillante con riflessi verdi. Al naso ha un bouquet complesso e fresco, dagli aromi delicati che ricordano il burro e la vaniglia. Al palato è di buona struttura, eleganza e mineralità che si esprime con un’acidità fresca e ben equilibrata, armoniosamente fusa con note di frutta.
Abbinamenti e servizio
Vino da abbinare con risotto di terra, pasta al sugo, risotto alle verdure, selvaggina, carni rosse, carni bianche, carni alla brace e formaggi stagionati. È consigliabile servirlo a duna temperatura di 8 - 10 gradi.

Returns and Refunds
