Il raffinato Fiano di Avellino DOCG "Exultet" incarna la personale interpretazione di un grande classico irpino da parte della cantina Quintodecimo. Sita a Mirabella Eclano in Campania, questa realtà nasce dal desidero dell'enologo e professore Luigi Moio e di sua moglie di creare vini che fossero autentico specchio dei loro Cru d'origine.
"Exultet" 2024 Fiano d'Avellino DOCG Quintodecimo è un vino bianco nato da uve Fiano 100% provenienti esclusivamente da una sola vigna situata a Lapio su un terreno argilloso-calcareo con altitudine di 570 metri s.l.m.
I grappoli sono raccolti manualmente nel periodo che va dalla fine di settembre all'inizio di ottobre, a maturazione aromatica completa, e riposti in piccole cassette da 15kg. In seguito alla pressatura dei grappoli interi e a particolari attenzioni dedicate al mosto, questo viene fatto fermentare in tini di acciaio per il 70% e per la restante parte in barrique di rovere nuove. L'affinamento sulle fecce che vengono costantemente rimesse in sospensione nel vino dura 4 mesi.
Nel calice il vino mostra una splendente tonalità gialla dai riflessi verdi, mentre all'olfazione emergono chiari e peculiari profumi di tiglio, acacia e timo. In bocca si rivela ben strutturato ed elegante con sensazioni di miele, frutta esotica e agrumi canditi sostenuti da una delicata impronta minerale.
Il Fiano “Exultet” 2024 di Quintodecimo è un vino bianco che racchiude ottime potenzialità d'invecchiamento.
