Nel sud Italia il termine “Zita” indica la sposa, infatti questo formato è tradizionalmente associato ai matrimoni come piatto irrinunciabile dei banchetti nuziali.
La tradizione vuole che la Mezza Zita, caratterizzata da uno spessore e ruvidezza importanti, sia spezzata a mano in parti irregolari, prima di essere messa in pentola per la cottura.
La Mezza Zita Tagliata è già stata ridotta nella sua lunghezza per una maggiore praticità di utilizzo in cucina.
Questo formato può essere impiegato nella preparazione di ricette al forno o di paste asciutte condite con sughi densi e colorati, di carne o di pesce, con verdure o ortaggi o con formaggi saporiti come il pecorino, il provolone o il caciocavallo.
